Grain Free Peanut Butter and Apple Pupcakes

It’s that time of year again! My fur baby, Benny, is one year older! As much as I hate to see him get older, I love the excuse to spoil him (more than usual) and throw a party! He wasn't thrilled about the birthday hat, but he put up with it in order to get his pupcake!

This year, I scoured the internet for dog cake recipes that were simple and grain free because the little guy has a seriously sensitive stomach. I wasn’t happy with any of the recipes I found, so I made my own! Both Benny and Emmett were OBSESSED with these! My boyfriend even tried one and vouched for their quality! So, on to the recipe!
Yield: 12 cupcakes
Cook time: 20 minutes
Ingredients:
1 cup peeled, shredded apple (about 1 large apple)
2 cups almond flour
1 teaspoon baking soda
1/2 cup natural creamy peanut butter
1/8 cup natural honey
3 tablespoons vegetable oil
2 eggs
1/2 cup water
Directions:
First peel and shred/dice the apple. I made the chunks pretty small so they blended in better. This part takes a while depending on how proficient your chopping skills are.
Pre-heat your oven to 325F. Spray a cupcake pan with cooking spray (or you can use coconut oil if you prefer).
Whisk together the flour, baking soda, peanut butter, honey, oil, and water. Make sure everything is completely combined.
Fold in the apple slices.
Fill each cupcake slot about halfway up with batter.
Bake for about 20 minutes, or until golden and spongey. Note: Start checking on them around 15 minutes to see how yours are progressing.
Once your beautiful pupcakes are done baking, remove them from the cupcake tin and let them cool COMPLETELY!
Then frost them with a thin (I mean really thin or else they won’t be able to get it down) layer of peanut butter and serve to your beloved pooch! Hint: it’s handy to have their water bowl nearby.
WARNING: if you don’t store these in the refrigerator, they will mold quickly because of the apples.
